At least for graylog2-web-interface, you can see it on the page.

For the Graylog server version, click on System/Nodes, then click on the
node name link. Scroll down to the 'System' section:

SystemHostname:graylog2.dev.pavlovmedia.corpNode ID:

The web interface version is in a very light gray font at the bottom of
every graylog web page.

"graylog-web-interface v1.2.1 (c301e97) (Oracle Corporation 1.8.0_60 /
Linux 3.13.0-37-generic) on graylog2.dev.pavlovmedia.corp"
